Recipe: Green Curry Beef

Here is the recipe for Green Curry Beef.

Ingredients
300g beef (daging)
2 cups coconut milk (santan segar)
Vegetables (brinjal, capsicums or long beans)
1tbsp corn starch (tepung jagung)
Kaffir lime leaves (daun limau purut)
Corriander leaves (daun ketumbar)
Lime juice (air limau nipis)
Fish sauce, palm sugar, salt (sos ikan, gula Melaka, garam)
2tbsp of cooking oil (minyak masak untuk menumis)

Blended ingredients
4 shallots (bawang merah)
3 garlic (bawang putih)
1 lemongrass (serai)
4" galangal (lengkuas)
1" ginger (halia)
1 tbsp corriander (ketumbar)
Green chilli  & bird eye chilli - depending on your spicy tolerance (cili hijau & cili padi)

Cooking instructions
1. Blend all the blended ingredients.
2. Heat 2tbsp of oil in a pan. Add the blended ingredients, and fry until fragrant.
3. Add 300g beef, fry for 10 minutes. Add in 1 cup of coconut milk while constantly stirring for 2 minutes. Add in the other cup of coconut milk, and about 1 cup of water to boil the beef on medium heat until cooked.
4. Add in 1tbsp corn starch and stir constantly to avoid lumpy texture.
5. Pour in the lime juice, fish sauce, palm sugar and salt. Continue stirring.
6. Add in the vegetables & kaffir leaves. Continue heating while stirring on medium fire for 5 minutes.
7. Garnish with corriander leaves and serve.

Footnote: The corriander leaves can be substituted with celery leaves. And this recipe can also be used for chicken. Enjoy cooking!
