Recipe: Cheesy Chicken Puree for my baby

Preparing Sophie's food is such a joy because my babygirl just loves eating.

Here's another recipe that I find worth sharing. So yummy.

Sweet potatoes and carrots

Chicken Thighs

 
Cheddar cheese

Everything mixed in a pressure cooker, ready to be pressured and cooked

Cooked and ready to be blended for smoother texture

Ready to be frozen

Ingredients: 
2 chicken thighs
1tbsp VCO
3 medium size carrots (cleaned, peeled and chopped)
2 big size orange sweet potatoes (cleaned, peeled and chopped)
30g cheddar cheese (grated)
Vegetables broth

Method 1:
1. Remove the meat from the chicken thighs and discard the skin and fat. And cut into chunks.
2. Heat the VCO in a pot or pan and saute the chicken for about 6 minutes until the chunks are all white on all sides.
3. Add the sweet potatoes, carrots and vegetables broth. Bring to the boil, then cover and simmer for about 15 - 20 minutes.
5. Add cheese and stir together.
6. Blend for smoother texture.

Method 2 (using pressure cooker):
1. Remove the meat from the chicken thighs and discard the skin and fat. And cut into chunks.
2. Add the chicken, sweet potatoes, carrots, cheese and vegetables broth into the pot. 
3. Choose "Chop" from the menu and hit "Start". Wait (or leave it and go do about anything you need to do) for about 30 minutes until its ready.
4. Blend for smoother texture.

I am not paid to say this but I tell you, the pressure cooker is probably the best thing that I ever got for myself.
